Helmed by an international team of award-winning culinary professionals, the highly-anticipated Catalunya is a contemporary Spanish restaurant poised to unveil an unrivalled and distinctively novel culinary experience mid-July this year.
Nestled in the newly built The Fullerton Pavilion in the heart of the Marina Bay district, Catalunya is primed to redefine Singapore’s dining landscape and pin the country on the world culinary map upon its opening.
Catalunya will serve a menu that reflects the diversity of the Spanish cuisine, and elegantly melds the finesse of Asian hospitality and classic Spanish charm. Boasting a team trained by elBulli’s multi-talented culinary experts and from other award-winning establishments such as Santi, one Michelin-starred Drolma in Barcelona and Pierre Gagnaire’s acclaimed restaurant Sketch, diners from around the region will be treated to an intimate indulgence amidst the sophisticated setting of Catalunya’s 120-seat restaurant.
Catalunya is seated in a unique glass-encased dome floating atop the waters of Marina Bay with an all-round
panoramic view of the cityscape and Marina Bay Sands. It proudly exhibits the world-renowned visionary design of award-winning New York design firm, AvroKO. With a ground-breaking destination restaurant as such, Catalunya aims to bring to life an immersive, multi-sensorial dining experience that will set the bar amongst local Spanish restaurants.
Executive Chef Alain Devahive Tolosa will spearhead Catalunya’s culinary direction with his unparalleled creativity and technical experience. He has spent a decade in the kitchens at elBulli Restaurant and elBulli Catering, and is well educated with the teaching and demonstration activities of the new techniques and products developed at elBulli
Restaurant. Chef Alain has also held prominent positions in several Michelin starred restaurants in Europe.
Working alongside Chef Alain to bring Catalunya to the forefront of Singapore’s dining scene is Restaurant Manager Pol Perelló, who was Director of Communications and Restaurant Manager of elBulli for 12 years. Hewill lead an international team of professionals to offer a truly exquisite visit where traditional food and modern techniques meet. True to his Catalan roots, Pol aims to create a wholesome Spanish experience with the right ambience for every guest. Other former elBulli team members also include Ruben Carmona, Mauricio and Sergi Villacampa.
To complement the renowned culinary team, award winning Mixologist Dario Nocentini will be inventing one- of-a-kind cocktails concocted with high quality spirits using contemporary techniques. With years of extensive
international experience in Italy, London and Spain, Dario has worked in the prestigious Eclipse Bar in W Barcelona and won numerous national cocktail competitions representing Spain worldwide; some notable accolades include winning the Merlet Sidebar Cocktail Competition and Bacardi Superior Legacy Cocktail Competition.
With warm lighting and modern furnishings of a Spanish Boqueria made from rich natural materials, this 4,300 square feet modern Spanish restaurant offers indoor and alfresco dining options for all seeking to discover new experiences.
